  • 4 chicken breasts (about 600 grams)
  • 2 tablespoons oil
  • 40 grams of butter
  • 2 onions, grated or finely chopped
  • 4 teaspoons ginger-garlic paste
  • 2 teaspoons cumin and coriander powder
  • 1 teaspoon turmeric
  • 1/4 teaspoon hot red pepper
  • 2 tablespoons chutney of mango or sugar
  • 300 milliliters of hot chicken broth
  • 100 milliliters of cream
  • 1-2 tablespoons roasted sliced ​​almonds

Method of preparation :

Cut the meat into chunks about 3 cm, season with salt and freshly ground black pepper to taste.

Heat 1 tablespoon olive oil in a large skillet and fry the meat for 5-6 minutes, stirring occasionally. Transfer it to a plate and cover with foil so that it does not cool down.

Put the remaining fat in the pan and fry the onion until soft and caramelized, about 10 minutes. Add the ginger paste and spices, after a minute add the mango chutney and broth. Boil for 5 minutes until the liquid is reduced and halved.

Return the meat to the pan and simmer for 5-6 minutes in the sauce.

Add a little water if the sauce becomes too thick.

Garnish with roasted sliced ​​almonds and fresh coriander when serving.
