In a large skillet over medium heat, heat the olive oil. Season the chicken fillet with oregano, salt and pepper. Fry the meat until it acquires a brown crust - for about 6 minutes on the side.
Transfer the finished fillet to a plate, and in the pan - without cleaning it from the pieces of meat - put the wine and stir with a wooden spoon to pick up the burnt pieces on the bottom of the dish. Add the butter and stir to melt, then add the garlic and lemon juice.
Return the chicken to the pan and place the grated mozzarella on top of each fillet. Stew for 1 minute under a lid to melt the cheese. Brush the meat with pesto and add the quartered tomatoes. Grate parmesan on the dish and serve immediately.
