Required products :

700 grams chicken liver
3 medium onions
4 tablespoons dry red wine
4 tablespoons balsamic vinegar
olive oil for frying
3 bay leaves
salt, sugar and ground black pepper to taste
mashed potatoes for serving the dish

Method of preparation :

Peel an onion, cut it into semicircles and fry until golden in hot olive oil. Then reduce the heat to medium and sprinkle with sugar and salt to taste, pour the balsamic vinegar and let everything cook until the liquid thickens.
When this happens, remove the onion to another bowl. Pour more olive oil in the same pan (in which you fried the onion), increase the heat and put the washed and dried chicken livers. Fry them until a yellow crust forms on their surface, and at the end of cooking season with salt and ground black pepper to taste.
Then lower the heat again and pour the wine over the livers. Put the bay leaves, close the container with a lid and leave for 5 minutes (until the wine evaporates completely).

Put mashed potatoes in a suitable dish, caramelized onions on it and the liver on top of the onion.

You can now serve the dish.

Enjoy your meal!
