Richly flavored wings with a crispy crust and citrus sauce - a dish just for the weekend. Accompany them with a glass of good wine, toast and enjoy them!

Start by seasoning the meat with salt and pepper.
Heat the rapeseed oil in a deep frying pan over medium heat. Once the fat has warmed up, place the wings face down in the pan and cook for 8-10 minutes. Turn and fry for another 4-6 minutes.
Meanwhile, finely chop 2 green onion stalks and set aside.
Cut the garlic head crosswise in half. Put the two halves in the pan next to the chicken. Add the remaining onion without cutting. Season with salt and pepper, and cook until soft and lightly browned (3 minutes). Add the crushed garlic cloves and stir. Fry for about a minute, the garlic should not burn.
If desired, you can leave the garlic halves in the dish or remove them.
Pour the lemon juice, soy sauce and 1 teaspoon of water into the pan. Stew under a lid for about 15-20 minutes until the chicken is completely cooked and the sauce is reduced and 1/3 of the liquid remains.
Sprinkle with chopped green onions and grate the rind of a lime in the dish, and the fruit itself cut into quarters and serve.
