Method of preparation :
Soak chickpeas in water for about 4 hours, then boil until soft in the same liquid, adding a little sugar. Puree with a blender (along with water), season with salt, pepper, add the egg and mix everything well.
Then pour the yogurt and beat with a wire whisk to obtain a smooth mixture. Add the flour with the leavening agent. Stir with bodies again. The dough should be tender and not too thick. Orient yourself on the consistency and use a larger amount if necessary. Leave the dough for a while until you make the onion jam.
Cut the onion into semicircles and fry until transparent in a pan in which the oil and butter have heated up. Then pour the vinegar, add salt and pepper to taste and simmer without closing the pan with a lid until the onion turns golden. Add honey last, heat for a minute, stirring and remove from heat. The jam is ready.
Bake golden pancakes from the dough (about 10 cm in diameter) and serve with the onion filling.
