How To Cook Chocolate Cheesecake With Raspberries Without Baking - Recipe

Required products :

  • 320 grams of cocoa biscuits
  • 80 grams of butter, melted and cooled
  • 375 grams of cream cheese at room temperature
  • 125 milliliters of cream
  • 70 grams of powdered sugar
  • peel of 1 lemon, finely grated
  • 1 tablespoon gelatin powder
  • 60 milliliters of boiling water
  • 200 grams of fresh raspberries

For garnish :

  • 100 grams of fresh raspberries
  • 60 grams of chocolate chips
  • fresh mint leaves
  • powdered sugar

Method of preparation :

  • Mix the biscuits with the butter in a blender and grind them to a fine consistency.
  • Pour them into a rectangular shape with a removable bottom and press them to the bottom and walls to form the cookie sheet.
  • Cool for about 15 minutes until firm.
  • In a large bowl, beat the cheese, cream, sugar and lemon zest with a cream mixer until the sugar is completely dissolved.
  • In a small bowl, mix the gelatin with boiling water and stir until dissolved.
  • Add to the cheese mixture and stir until smooth.
  • Add 200 grams of raspberries, stir to distribute evenly and pour over the biscuit crust.
  • Refrigerate for about 4 hours or until the cream is firm.
  • Cover a small baking tray with parchment paper and spread the chocolate chips upside down.
  • Place one raspberry on top, also top down, and let them stand for about 15 minutes.
  • Garnish the cheesecake with chocolate raspberries and fresh mint leaves.
  • Sprinkle with powdered sugar and serve.
