Method of preparation :
Make the chocolate dough by placing the butter and powdered sugar in a bowl, stirring with a spoon. Add the yolk and continue to stir until smooth. Sift the flour with the cocoa and form a dough, which you wrap in foil and cool for 20 minutes.
Preheat the oven to 180 degrees (if using a fan, reduce the temperature to 160 degrees).
Grease 4 separate small cupcake tins with butter and spread the dough between them. Press your fingers well on the bottom and walls and cool in the freezer for 10 minutes.
Put a sheet of baking paper in each and put grains of your choice on top - rice or beans (this will prevent the crust from inflating). Bake for 10 minutes and remove the beans with the help of paper, then return the tartlets to bake for another 5 minutes.
Make the filling - melt a chocolate bowl in a water bath. Beat the egg whites in the snow, adding the sugar in portions while not stirring.
Mix the yolks with the cooled chocolate and stir, then carefully start adding the egg whites to the chocolate mixture, stirring with a silicone spatula.
Distribute half of the mousse between the chocolate tartlets and place a few raspberries on top, then cover with the remaining chocolate cream.
Bake for 12 minutes, then serve with whipped cream and more raspberries.
