How To Cook Chocolate Tartlets With Walnut Filling And Caramel - Recipe

Required products :

100 grams of flour
50 grams of cocoa powder
195 grams of butter (100 grams for the dough, 75 grams for the filling and 20 grams for the caramel)
50 grams of powdered sugar
250 grams of brown sugar
140 grams of walnuts
3 eggs (1 yolk for the dough and 2 whole eggs for the filling)
100 milliliters of liquid cream with a fat content of 35%

Method of preparation :

In a suitable bowl, mix the flour with the butter, cocoa and powdered sugar. Grind with your hands until you get fine crumbs.

 

Add the yolk, a pinch of salt and quickly knead a homogeneous dough with your hands.

 

Shape it into a ball and refrigerate for 30 minutes.

 

Then roll out thinly and distribute in tartlet tins. Put back in the fridge while you make the filling.

Grind the walnuts with a blender, add the diced butter, 100 grams of sugar and both eggs. Beat until smooth.

 

Spread the filling on the sand base and bake the tartlets in the oven at 200 degrees for about 30 minutes.
Leave them to cool and start with the caramel.

 

Pour the remaining 150 grams of brown sugar into a bowl and place on the stove until the sweet crystals turn into caramel. Then pour the cream, but be careful because it will foam very strongly.

 

Remove the mixture from the heat, add 20 grams of oil at room temperature. Stir until smooth and allow the mixture to cool slightly.

 

Spread the finished tartlets with caramel and decorate with walnuts and mint leaves.
