Christmas cookies have long been a traditional part of the holiday table for many families. Eating hot chocolate cookies is almost a must for Christmas morning! Here is a suggestion from us for biscuits with pistachios and dried citrus fruits.

Required products :

  • 2 3/4 tea cups flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 220 grams of oil at room temperature
  • 3/4 tea cup sugar (with fine crystals or powder)
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/3 tea cup chopped dried citrus - lemon and orange
  • 1/3 tea cup crushed pistachios
  • 1/2 cup dried cranberries

Method of preparation :

In a large bowl, sift the flour together with the salt and baking powder.

In another, mix with a mixer for about 3-4 minutes the butter and sugar until a fluffy mixture is obtained and the sugar crystals begin to melt. Add the egg and vanilla and stir until smooth.

Add the dried fruits and nuts. Combine with flour and mix well.

Form a long wick about 5-6 inches thick. Wrap in foil and put in the freezer for 20 minutes.

Turn the oven to 175 degrees.

Cut the dough into slices about 1 cm thick and arrange them in a tray lined with paper.

Bake for 10-14 minutes until lightly pink. Cool them in the pan for 5 minutes before removing them from the paper. Wait until they reach room temperature before storing them in boxes. You can store the biscuits for up to 10 days.
