Required products :

  • 1 teaspoon dry yeast
  • 76 grams of warm milk
  • 285 grams of water at room temperature
  • 1 tablespoon olive oil
  • 500 g Biga souring 12:00
  • 500 grams of flour
  • 1 tablespoon salt
  • kneading flour
  • corn flour for sprinkling

Method of preparation :

  • In a large bowl, mix the yeast with the milk. Stir and let stand for about 10 minutes.
  • Add the water, olive oil and biga and mix well.
  • Add the flour and salt and mix with the flour attachments for 2-3 minutes on low speed, then for 2-3 minutes on medium speed.
  • Knead a soft dough on a clean floured surface, adding flour as needed.
  • Transfer the dough to a greased bowl, cover with plastic wrap and leave to rise for about 1 hour until it doubles in size.
  • Divide it into 4 equal parts and roll them on a floured surface.
  • Use your fingers to form rectangles and arrange them in a tray covered with baking paper and sprinkled with corn flour.
  • Pat the dough vigorously with your fingers so that it does not rise too much. Cover with a damp cloth and let rest for about 1.5-2 hours.
  • Preheat the oven to 220 degrees and place the pan in the middle.
  • Bake the bread for 20-25 minutes, spraying the bottom of the oven with water 3 times during the first 10 minutes of baking to form abundant steam.
  • Transfer the chabata loaves to a wire rack to cool.
