Mash the blackberries, put them together with the sugar in a saucepan. Leave to stand for an hour, heat the stove and pour the water. Cook over low heat until thickened and cool.
Strain the mixture through a strainer and season with lemon juice. Pour the fruit syrup into cocktail cups, add mint leaves and pour the champagne. Cool and serve.
