Required products :

  • 3 teaspoons flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon sugar (white or brown if desired)
  • 2 2/3 teaspoons coconut shavings (or 2 cups fresh grated coconut)
  • 2 eggs
  • 1 teaspoon condensed milk
  • 1 teaspoon coconut or vanilla extract
  • 1/2 cup melted butter (chilled)

Method of preparation :

Turn on the oven to preheat to 170 degrees.

Grease two rectangular cake pans with butter.

Combine flour, baking powder and salt, add coconut and sugar.

Make a well in the center.

Mix the milk, eggs, vanilla and butter. Pour in the flour and stir.

Distribute in both pans and bake for 40-50 minutes until ready (check with a stick, if it comes out dry from the cake, then it is baked). Cool for 10 minutes before removing from the pan, then cool completely.

Optionally, while the cake is still warm, sprinkle with coconut shavings.
