How To Cook Cold Fresh Cucumber Soup With Sun-dried Tomatoes, Mozzarella And Basil - Recipe

Learn how to cook "Cold soup of fresh cucumbers with dried tomatoes, mozzarella and basil". Delicious recipe.

Required products :

  • 600 grams of cucumbers
  • 2 slices of white bread without crusts
  • 1 clove garlic
  • 4 sprigs of basil
  • 4 tablespoons olive oil
  • 2-3 tablespoons white wine vinegar
  • salt, pepper
  • 200 milliliters of mineral water
  • 1 tablespoon capers
  • 125 grams of mozzarella
  • 50 grams of dried tomatoes

 

Method of preparation :

Peel the washed cucumbers and cut them into large pieces.

Break the bread into small pieces with your hands, mix with the cucumbers, add the chopped garlic clove and half of the basil.

Drizzle with olive oil and vinegar, sprinkle with spices and leave for 5-7 minutes so that the products absorb the aromas and flavors of the additives.

Then pour the mineral water, put half of the capers and grind until smooth, using a blender.

Put the soup in the refrigerator.

Cut the mozzarella into thin circles, the dried tomatoes into small pieces, and saturate the remaining basil and capers. Mix the products prepared in this way.

Distribute the cooled soup in a plate and in each put the aromatic mixture with tomatoes and cheese.
