There are no strict rules in the preparation of compote. Compote can be cooked from berries, fruits, from their mixture and even from dried fruits. The amount of sugar can also be adjusted to your liking. Sometimes sugar is not added to compote at all - it turns out to be healthier and more dietary. If you like more acidic compotes, then use cherries, plums, cherry plums, oranges, currants, cranberries, gooseberries for their preparation. Dried fruit compote (dried apricots, raisins, prunes, dried apples and pears) is boiled and infused for a long time and often; sugar is not added to such compote.
Compote cooking time depends on the berries and fruits from which the compote is cooked and can vary from 1 minute to 15 minutes.
When cooking compote, consider some of the nuances:
- for compote, choose ripe, fresh and fragrant berries and fruits;
- before cooking, rinse the berries well, remove leaves, twigs;
- for cooking compote, choose a large saucepan and pour liquids into approximately 2/3 of the volume of the saucepan;
- it is not necessary to cook compote for a long time. If the berries are tender (blackberries, raspberries, strawberries), then it is enough to bring the water with the berries to a boil and boil for 1 minute. Then leave the compote under the lid until it cools completely. During this time, the compote is perfectly infused.

Step 1
For work, we need raspberries - 150 grams, blackberries - 50 grams, water - 2 liters, sugar - 120 grams, a saucepan, a colander.
Step 2
Fill the pot 2/3 full with water.
Step 3
Rinse the berries, remove debris and ponytails.
Step 4
Add berries and sugar to the water.
Step 5
Boil. Boil for 1 minute and leave covered until completely cool.
Step 6
Strain compote if desired.
Step 7
Compote is ready to serve.
