Peel a squash, grate it and cut it into thin strips. Sprinkle with parsley and basil, add salt and stir. Mash the garlic and mix with olive oil, add black pepper. Drizzle the peppers with the aromatic fat.
Season with vinegar, stir and refrigerate for 30-40 minutes.
Boil the couscous according to the instructions on the package.
Pour it into the salad bowl, add the peppers and stir.
