Required products :

  • 150 grams of sugar
  • 250 grams of cream cheese at room temperature
  • 1 can of 400 grams of condensed milk
  • 6 egg yolks
  • 2 teaspoons vanilla

for the apple pie:

  • 175 grams of soft butter
  • 2 large apples - one grated, the other thinly sliced
  • 1 teaspoon cinnamon
  • 330 grams of sugar
  • 3 eggs - divided into whites and yolks
  • 150 grams of self-swelling flour

Method of preparation :

Put on the bottom of 8 cups of caramel cream parchment paper.

To prepare the caramel, put the sugar in a saucepan, add 2 tablespoons of water and heat, cook for about 7-8 minutes, without stirring, until you get caramel.

Pour the caramel into the prepared bowls and leave to cool.

Meanwhile, beat the cream cheese with a mixer, add the condensed milk, egg yolks and vanilla. Put a pinch of salt and spread the cream in the bowls on the caramel.

Cool for 1 hour until firm.

Meanwhile, melt 25 grams of butter in a saucepan, add the grated apples, cinnamon, 55 grams of sugar and 60 milliliters of water. Cook for about 8-10 minutes until the fruit is soft. Cool.

Turn on the oven to preheat to 160 degrees.

Combine the apple mixture with the yolks of the 3 eggs, 1/2 cup sugar (110 grams) and flour.

Beat the egg whites until soft peaks and gently, stirring with a silicone spatula, combine with the apple mixture.

Distribute in bowls, being careful not to push the apple mixture into the cream.

Bake for about 35-40 minutes.

Put the remaining 165 grams of sugar and 2 tablespoons of water in a large pan and cook for about 6-8 minutes until the mixture caramelizes. Add the thin slices of apple and cook for about 30 seconds on each side. Transfer them to a paper-lined tray. Save the caramel from the pan.

Cool the finished cupcakes for 5 minutes, then carefully separate from the tins and turn.

Place an apple slice on top and pour the caramel.
