Required products :

  • 1/2 teaspoon sugar
  • 7 egg yolks
  • 4 proteins
  • 1 liter of fresh milk
  • 200 grams of cream cheese
  • 1 1/2 teaspoons vanilla extract
  • 1 pinch of salt

For caramel :

  • 1 teaspoon sugar
  • 2 tablespoons fresh lemon juice

For garnish :

  • caramel sauce
  • whipped cream / optional /

Method of preparation :

  • Pour 1 teaspoon of sugar into a cake tin with a diameter of about 23 centimeters and sprinkle it with 2 tablespoons of freshly squeezed lemon juice.
  • Caramelize the sugar in a preheated oven to 180 degrees, stirring occasionally until completely melted and golden brown.
  • Remove the pan from the oven and allow the caramel to harden.
  • In a deep bowl, beat the yolks and add the milk, vanilla and salt.
  • In another bowl, beat the egg whites with the cream cheese and 1/2 teaspoon of sugar.
  • Mix the contents of the two bowls and mix until a homogeneous mixture is obtained.
  • Pour the cream over the hardened caramel and place the baking dish in a larger pan. Fill the pan with water to the middle of the form.
  • Bake the caramel cream at 180 degrees for about 50-60 minutes. It should shake slightly when you push the form and the knife comes out relatively clean from the cream.
  • Remove from the oven and wait 2 hours for it to cool completely before turning it over on the tray.
  • Cut caramel cream and serve with caramel sauce or whipped cream.
