Required products :

  • 1 kg of green asparagus
  • 1 onion, finely chopped
  • 3 tablespoons butter
  • 5-6 teaspoons chicken broth
  • 1/2 teaspoon cream
  • 1/4 teaspoon lemon juice

Method of preparation :

Cut the asparagus, discarding the bottom and thickest part (about 2 cm from the end). Save a few of the tops for decoration when serving.

Put 2 tablespoons of butter in a saucepan, when melted add the asparagus, salt and pepper to taste and fry for 5 minutes. Add the broth and simmer the soup under a lid for about 15-20 minutes until the asparagus is fully cooked.

When the soup is ready, blanch the reserved asparagus tips in salted boiling water for 3-4 minutes, then strain.

Puree the soup and add the cream. Season to taste and serve, adding a few sprigs of asparagus in each portion and pour lemon juice.
