Put a large saucepan on the stove. Heat the oil or olive oil in it over medium heat. Fry the onion in the fat until it softens and darkens. Add a little water if it starts to burn.
Add celery, leeks and potatoes. Then add the butter and stir until completely melted. Cover the pan with a lid and let the mixture simmer for 4-5 minutes.
