Required products :

  • 1 1/2 tablespoons unsalted butter
  • 1/2 cup leek, finely chopped
  • 1 1/2 tablespoons flour
  • 3 cloves garlic, pressed
  • 1/3 tea glass of dry white wine
  • 3-4 teaspoons of vegetable broth
  • 700 grams of chopped green asparagus
  • 1 bay leaf
  • 1/2 teaspoon cream
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • a pinch of nutmeg
  • 1 teaspoon fresh lemon juice
  • grated parmesan for sprinkling

Method of preparation :

  • Melt the butter in a large saucepan over medium heat.
  • Saute leeks for about 5 minutes until soft.
  • Add the garlic and cook for another 1 minute.
  • Add the flour and stir vigorously for 2 minutes.
  • Drizzle with white wine and stir constantly for about 1 minute to burn the flour.
  • Add the broth and after the mixture boils, add the chopped asparagus and bay leaf.
  • Reduce heat and simmer for 7-10 minutes or until asparagus is tender.
  • Remove the bay leaf and puree the soup until smooth.
  • Return it to the hob and add the cream, salt, pepper, nutmeg and lemon juice.
  • Stir and cook for another 2 minutes.
  • Distribute the asparagus cream soup in bowls, sprinkle with grated Parmesan and serve.
