Cut the leeks into circles, peel the potatoes and cut into pieces. Stew them in butter, season with salt and other spices of your choice. When soft, puree with a blender. Then pour the cream, mix well, transfer the cream to a saucepan and bring to the boil.
In a separate bowl, boil water and beat the quail eggs in it. After about a minute or two, remove from the heat and leave the eggs in the water for 10 minutes.
Divide the soup into loaves of bread and serve with eggs.
