Cut the bacon into small pieces and fry in a pan until crispy, using no fat other than the one that will release the product.
Put the potatoes to boil, but peel them first. Once the water boils, add salt. Reduce the heat and let the potatoes cook until very soft.
Then drain the liquid and mash them to a puree, to which add the butter and cream. Stir.
Pour the milk and place the bowl on the hob. Season to taste and let the mixture boil.
Serve the soup hot, adding pieces of bacon, a little grated cheddar cheese and chopped fresh onions to each portion.
