How To Cook Cream Of Red Beet Soup With Carrots And Potatoes - Recipe

Learn how to cook "Cream of beetroot soup with carrots and potatoes". Delicious recipe.

Required products :

  • 4 red beets, peeled and diced
  • 2 teaspoons olive oil
  • 1 onion, finely chopped
  • 2 large carrots, finely chopped
  • 3 stalks of celery, cut
  • 500 grams of diced potatoes
  • 4 teaspoons chicken broth
  • 1 teaspoon water
  • salt and freshly ground black pepper
  • 2 tablespoons sour cream
  • wild onion for garnish, finely chopped

Method of preparation :

  • Heat olive oil in a saucepan over medium heat.
  • Stew onions, carrots and celery for about 5 minutes or until onions are soft.
  • Add the beets, potatoes, broth and water. Stir.
  • When the soup boils, reduce the heat and simmer for about 1 hour until the beets are soft.
  • Mash and season with salt and freshly ground black pepper.
  • Pour the cream soup into bowls, garnish with sour cream, sprinkle with chopped chives and serve.
