Required products :
1 stalk of leek (white part only) or 1 onion
2 potatoes
bunch sorrel
2 tablespoons butter
2 teaspoons vegetable broth
2 teaspoons milk
1/2 tablespoon lemon juice
salt and ground black pepper to taste
liquid cream
Method of preparation :
Peel leeks and onions. Cut the onion into thin circles and the potatoes into cubes. Wash the sorrel, remove the stems, use only the leaves.
Heat the butter in a saucepan and fry the onions and potatoes for 4-5 minutes. Then pour the broth, milk and bring to a boil. Season to taste and cook for about 20 minutes. 5 minutes before removing from the heat, add the sorrel.
Once the soup has cooled a bit, beat until smooth with a blender.
Return to the hob, add the lemon juice, stir, but do not allow the liquid to boil. Distribute the soup in suitable plates and add a little cream in each.
