How To Cook Cream Of Sweet Potato Soup With Ginger, Beans, Marshmallows And Peanuts - Recipe

Required products :

  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 900 grams of sweet potatoes, peeled and diced
  • 1 tablespoon ginger root, chopped
  • 4 1/2 cups chicken broth
  • salt and pepper to taste
  • 1/4 teaspoon cinnamon powder
  • 1 can of white beans, drained
  • 6 tablespoons peanuts (or sunflower seeds)
  • 85 grams of marshmallows

Method of preparation :

Heat olive oil in a saucepan and fry onions in it for 4 minutes. Add the potatoes, ginger and cook for 2 minutes. Pour the chicken broth, salt, pepper, cinnamon and beans. Cover with a lid and simmer for 20 minutes or until the vegetables are soft.

Blend the soup until smooth, serve in 6 bowls, garnish with peanuts or sunflower seeds and marshmallows.
