Required products :
2.5 teaspoons flour
7 grams dry yeast
1 teaspoon salt
1 egg to spread
For the stuffing:
8 ripe tomatoes
150 grams of mozzarella
4 large thin slices of smoked ham
olive oil
salt and pepper to taste
About the pesto:
1 large bunch basil
200 milliliters olive oil
2 cloves garlic
1 tablespoon crushed pine nuts
2-3 tablespoons grated parmesan
Method of preparation :
In a large bowl, pour 1 cup of warm water and dissolve the yeast and salt in it. Gradually add a little flour and make a dough. Knead for 10 minutes and cover with a towel. Let stand for 30 minutes to rise. Then knead for another 5 minutes and leave to rise again, this time for 20 minutes.
Make a cross cut on the tomatoes, put them for about a minute in boiling water, then immediately in cold and peel them. Peel a squash, grate it and cut it into small cubes. Add salt and leave for 30 minutes. Transfer to a colander to drain the liquid and season with ground black pepper.
Cut the mozzarella into thin circles.
Roll out the dough into a rectangle 0.5-0.7 cm thick. Put it in a pan greased with olive oil.
Put a piece of ham, a layer of tomatoes and a row of mozzarella on this base. Sprinkle each layer with plenty of olive oil. Cover with two pieces of ham and join the ends of the dough two by two, folding them in half.
Coat the surface with beaten egg.
Turn the dough back with one swipe so that the flat side is on top. Brush it with egg.
Bake the bread in the oven at 220 degrees for an hour.
If the surface starts to redden very quickly, cover with foil.
Make the sauce by mixing olive oil with crushed pine nuts, basil, parmesan and chopped garlic.
Serve the crispy bread with the resulting aromatic addition.
