Broccoli is a low-calorie vegetable, low in carbohydrates, rich in fiber, vitamins, minerals and essential amino acids. Fiber cleanses the body of harmful substances and lowers cholesterol levels. Mix all products in a saucepan, except milk, salt and pepper.
Wait for the combination to boil, then reduce the heat and simmer for 8-10 minutes. Then add the milk, bring the soup to a boil again and remove from the heat. If you want to thicken it, wait a few more minutes.
Mash and season with salt and pepper to taste.
Serve the soup warm, garnished with croutons and fresh parsley (or serve with one of the suggestions below).
Clean, wash, slice and pour into a pot of water potatoes, carrots, leeks and celery. Place the pan on the hob and after the liquid boils, reduce the temperature. Saute onion and garlic in oil and a little water. Add them to the vegetables and continue cooking until soft (about 20-30 minutes).
Divide the broccoli into small pieces, put them in the broth and cook for 10-15 minutes. Then mash 2/3 of the broccoli until smooth and return to the broth. Mix the cream and flour, pour into the broth and cook for 5 minutes.
Serve the soup with croutons, fresh spices and grated cheese if desired.
