Necessary products for the preparation of dietary broccoli soup:

  • 1 large head of broccoli
  • 1 potato, peeled and diced
  • 1 diced carrot
  • 1 stalk of leek, chopped
  • 1 stalk of celery, chopped
  • 2-3 onions, finely chopped
  • 2 cloves garlic, chopped
  • 2 teaspoons vegetable broth (homemade)
  • 1 cup low-fat milk (cow's or soy)
  • 1 tablespoon butter
  • salt and pepper to taste
Additional ingredients:
  • 4-5 tablespoons thick cream
  • 1 tablespoon flour
  • 2 tablespoons almond flakes
  • parsley
  • croutons
  • cheese

Option 1 for making broccoli soup for weight loss

Mix all products in a saucepan, except milk, salt and pepper.

Wait for the combination to boil, then reduce the heat and simmer for 8-10 minutes. Then add the milk, bring the soup to a boil again and remove from the heat. If you want to thicken it, wait a few more minutes.

Mash and season with salt and pepper to taste.

Serve the soup warm, garnished with croutons and fresh parsley (or serve with one of the suggestions below).

Option 2 for making diet broccoli soup

Clean, wash, slice and pour into a pot of water potatoes, carrots, leeks and celery. Place the pan on the hob and after the liquid boils, reduce the temperature. Saute onion and garlic in oil and a little water. Add them to the vegetables and continue cooking until soft (about 20-30 minutes).

Divide the broccoli into small pieces, put them in the broth and cook for 10-15 minutes. Then mash 2/3 of the broccoli until smooth and return to the broth. Mix the cream and flour, pour into the broth and cook for 5 minutes.

Serve the soup with croutons, fresh spices and grated cheese if desired.

  • You can serve broccoli cream soup with croutons. Prepare them by cutting wholemeal bread into cubes, season with olive oil and spices to taste (savory, paprika, salt, etc.). Bake in a preheated 200 degree oven until crispy and golden brown.
  • Serve the soup with separately cooked noodles and roasted almond flakes. Instead of noodles you can use another type of wholemeal pasta (spaghetti, pasta, etc.).
