Method of preparation :
In a large bowl, mix the warmed milk with the sugar and yeast. Allow to swell for 5 minutes.
Add the eggs and vanilla and stir. You should add the flour, lemon peel and salt. Knead a very soft dough and leave it to rise for 1 hour.
Transfer to a floured surface and mix lightly. Make 10 balls of 70 grams each. Try to shape the balls as well as possible without having edges on them. Arrange them in a tray and cover, let rise until doubled.
Heat the fat to 170 degrees and fry the donuts until golden.
While still warm, roll them in sugar crystals.
Prepare the strawberry jam. Put the fruit in a pan, add the sugar, after it melts, let the mixture boil until the strawberry pieces fall apart. Add the lemon juice and remove from the heat.
Put sugar, cornstarch, eggs and both types of vanilla in the pan. Mix well and add the milk. Bring the mixture to a boil, stirring constantly. When it thickens, add the butter and remove from the heat. Allow to cool.
Whip the cream until soft peaks and mix it with the cold cream. Keep the cream in the refrigerator until used.
Arrange the donuts side by side and make a small incision in each with a knife.
Put the jam and cream in two separate bowls.
Fill the donuts with cream, and then with the jam, do not worry, if part of the filling remains on top, put a piece of strawberry there.
