Required products :

pork fillet (or optional)

coarse salt

black peppercorns

coriander

dill

cumin

Bay leaf

paprika

clean gauze

 

Method of preparation :

Peel a squash, grate it and rub it with coarse salt. Place it on a suitable kitchen board or tray and leave to cool in a cool place. The time depends on the thickness of the piece of meat (2-3 days). Turn it at least once a day.

After a few days, remove excess salt, prepare gauze and spices. Crush the last ones, they hide the unique aroma that the pork will get. Rub it thoroughly with the fragrant mixture. Of course, you can use whatever spices you prefer, the ones listed are optional. Then wrap the meat in gauze and tie with string.

Find the most suitable place for drying - this can be a well-ventilated terrace, for example, but not exposed to the sun, of course. Hang the pork, it must hang. And here comes the hardest part - waiting :) About 5 - 7 days of patience are needed and then you can safely develop the meat and cut. The amazing scent will tell you that you have done everything right.
