How To Cook Dried Tomatoes In Olive Oil And Aromatic Spices - Recipe

Necessary products:

  • canned tomatoes
  • dry Italian spice
  • coarse salt
  • dried basil
  • dry rosemary
  • dry oregano
  • garlic
  • olive oil, refined or unrefined sunflower oil

 

Method of preparation:

Choose hard fleshy canned tomatoes. Wash them, cut crosswise and with the help of a teaspoon remove the liquid part with the seeds. Do not throw away, you can use to make sauce or ketchup. Take a tray or grill from the oven, cover with foil and arrange the tomatoes tightly on it. Mix a little olive oil with the Italian spice, put literally one drop of the mixture on each piece of tomato and sprinkle with coarse salt.

 

Place the pan in the oven at 100 degrees and let the tomatoes dry for 6-7 hours (preferably with the "fan" function on, if your oven has one). It is necessary to periodically, for an hour, open the oven a little to evaporate the liquid and close again. Alternate: 1 hour slightly open, one - closed. Be careful not to overdry the tomatoes, unless you prefer them so - judge according to your taste. When dry enough, let them cool.

 

Take clean (sterilized) jars, put on the bottom of the remaining spices and cut into thin slices of garlic. Next is a layer of tomatoes and again spices and garlic. Alternate until the jar is full. You can replace these spices with others that you think are suitable for flavoring tomatoes. If you wish, add herbs of your choice. Fill the bowl with olive oil (you can also use refined or unrefined sunflower oil).

 

Close the jar and store in the refrigerator for the winter.

These tomatoes are perfect for adding to salads or just spread slices of feta and put a tomato topped with olive oil.
