Necessary products:

4 eggs

200 ml of fresh milk

2 tsp sugar

1 kg of flour

pinch of salt

1 g of vanilla

1/2 tsp oil

45 grams of live yeast

100 grams of butter

1 tsp raisins

Method of preparation:

Dissolve the yeast in warm milk (not hot), add 1 tbsp sugar, a pinch of salt and 2-3 tbsp flour. Leave to rise.

Beat the eggs with the sugar and vanilla. Mix the butter with the oil and heat to melt the butter. Add the egg mixture to the fermented yeast. Gradually add the flour. You should get a soft and elastic dough. It's time for the butter. Put it in pieces and knead. Then "hit" the dough about 50 times in the table. This is mandatory because in this way it changes its structure, becomes more elastic, smooth and does not stick to the hands. Start stretching the dough, then fold it, repeat the procedure several times (until pores are formed) so that air can enter the dough and fibers form during baking. Cover with a towel and leave in a warm place for 1.5-2 hours or until the volume increases 2 times. Carefully transfer the dough to the hob (table) - at this point you can find out if your Easter cake will have fibers. Do not knead more, but carefully gather the dough and cut it into 9 equal parts (for 1 Easter cake you will need 3 parts).

Take one part and carefully stretch it. Sprinkle with pre-soaked raisins in water. Roll up and leave. Do the same with the other two pieces. Then knit a "braid" of the three parts and place in a greased form. Leave for 1 hour in a warm place to rise the dough. When this happens, spread it with egg yolk mixed with 2 tablespoons oil and sprinkle with sugar. Bake in a preheated oven to 180-200 degrees. Check readiness with a toothpick. From this dough you will get 3 Easter cakes.
