How To Cook Easter Cake With Sour Cream, Kefir And Raisins - Recipe

Required products :

  • 200 grams of kefir
  • 600-650 grams of flour
  • 100 grams of butter
  • 100 grams of sour cream
  • 180-200 grams of sugar
  • 10 grams of dry yeast
  • 150 grams of raisins
  • 3 eggs
  • 2-3 tablespoons oil
  • pinch of salt
  • packet of vanilla
  • egg yolk for spreading and sesame for sprinkling


Method of preparation :

Heat the kefir and pour in a spoonful of sugar, yeast and 2 tablespoons of flour. Stir, close the container and allow the mixture to rise.

Beat the three eggs with the remaining sugar until you get a white fluffy foam. Add sour cream, melted butter and beat with a mixer.

Combine the two mixtures and put the sifted flour in them, leaving a little to use during the kneading.

Mix well with a spoon, the dough should be sticky. Then transfer it to a floured surface or board and knead with your hands, adding the set aside flour. Pour 2-3 tablespoons of oil and continue to knead. The texture should be tender and soft.

Wash and dry the raisins, add them to the dough and knead to distribute evenly in it. Put it in a bowl, cover with a towel or stretch film and leave for an hour and a half in a warm place.

Then divide into three equal parts, which you form into rolls and weave a braid from them. Cut off the edges and roll up the braid, forming a circle, and place in a greased detachable form.

Make a knot from the clippings and put it in the center of the circle. Coat the surface with egg yolk, sprinkle with sesame seeds and bake for 50 minutes. For the first 10-15 minutes, the temperature should be 180 degrees, then cover the form with aluminum foil and continue to bake at 160 degrees.

Remove the Easter cake from the pan when cool.
