Required products :

  • 2 kilograms of beef loin
  • 4 tablespoons coarsely ground black pepper
  • 2 tablespoons coriander powder
  • 1 teaspoon mustard powder
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder

Method of preparation :

  • Put the meat in a large saucepan and cover with water.
  • Refrigerate for 24-48 hours, changing the water several times during this time.
  • Place a grid on the bottom of the pressure cooker and pour 1/2 teaspoon of water.
  • Put the veal on the grill and cook on high heat for 60 minutes.
  • Remove from the heat and carefully release the steam.
  • Mix the spices in a bowl, mix well and spread them on the bottom of a large plate or tray.
  • Roll the beef well in the spice mix and wrap it tightly in aluminum foil. Refrigerate overnight.
  • Before roasting, leave the meat at room temperature for 2-3 hours.
  • Unroll the foil and bake in a preheated oven to 120 degrees for about 1 hour.
  • Let the pastrami rest for 15 minutes before slicing.
  • Serve with rye bread, mustard, pickles or anything else of your choice.
