How To Cook Eclairs With Mascarpone Cream And Powdered Sugar - Recipe

Required products :

100 grams butter
1/4 teaspoon salt
220 grams flour
4 eggs
250 grams mascarpone
120 grams powdered sugar + a little sprinkle
100 milliliters of liquid cream with a fat content of 20-22%
250 milliliters of water

Method of preparation :

Pour 250 milliliters of water into a suitable container and bring to the boil. When this happens, add the butter, salt and let the mixture boil again.
Then sift the flour directly into the bowl with the hot water and stir. You should get a homogeneous thick dough that easily separates from the walls of the pan.

Beat the eggs separately, then start adding 1-2 tablespoons to the dough, stirring well after each dose.

In the end, a soft and thick dough is obtained, which retains its shape. Fill a pastry syringe with it or use a thick plastic bag, the corner of which you cut.

Cover the bottom of the pan with parchment and shape the eclairs, separating the dough with wet hands.

Bake them in a preheated 200 degree oven for about 30 minutes. The eclairs must inflate.
Once you turn off the oven, do not remove them immediately, but let them stay in it for 10-15 minutes so that they do not fall.

You should make a cream by whipping the mascarpone with the powdered sugar and cream. It becomes thick and tender.

All you have to do is fill the eclairs with it, which can be done with the help of a pastry syringe or just make a side incision along the length of the eclairs, which you fill with cream.

Sprinkle with powdered sugar and serve.
