Required products :

  • olive oil for spreading
  • 4 eggs, separated whites from yolks
  • pinch of sea salt
  • 1/4 cup parmesan cheese, grated
  • 1 stalk green onion, chopped
  • ground black pepper to taste

Method of preparation :

Preheat oven to 230 degrees. Cover the baking tray with parchment paper and grease with olive oil.

Separate the egg whites from the yolks by placing each yolk in a separate bowl.

Beat the egg whites with the salt with a mixer on high speed until stiff foam. Add parmesan and green onions and mix gently with a rubber spatula.

Spread the mixture in the shape of 4 nests on baking paper and make a well in the middle of each slot. Bake for 3 minutes or until lightly browned. Carefully pour the yolks into the wells and bake for 3 to 5 minutes. Remove, season with pepper and serve.
