Required products :

  • 2-3 eggplants
  • 2 cloves garlic
  • 1 tablespoon balsamic vinegar
  • parsley
  • 7 pitted olives
  • 2 tablespoons grated mozzarella (for the filling)
  • 50 grams of mozzarella for serving
  • 3/4 tea glass of dry white wine
  • 2 tomatoes
  • 1 sweet pepper
  • basil leaves for decoration

 

Method of preparation :

Wash the aubergines, cut them into pieces 0.5 cm thick. Put them in a colander, add plenty of salt and leave for 15 minutes. Then blanch for 2-3 minutes in boiling water or fry on both sides in hot oil. Drain with a colander.

Saturate the parsley leaves, olives and garlic and mix with thinly sliced ​​tomatoes. Season with black pepper and salt, add the grated mozzarella and stir.

Preheat the oven to 180-200 degrees.

At one end of the eggplant strips put the stuffing and roll up the rolls.

Cut the second tomato into cubes, pour a little water, wine and balsamic vinegar. Add the peppers, also cut into cubes, stir and pour the mixture into a pan.

Arrange the rolls on the vegetable mixture with the wine, placing them with the seam facing down. Bake them in the oven for about 30-40 minutes.

Just before they are ready (10 minutes before removing them), put a piece of mozzarella on each roll and bake.

Sprinkle with ground pepper and basil leaves.
