Necessary products:

1 eggplant

3 stalks of celery

400 grams of tomatoes (in their own juice)

3 tablespoons oil

225 grams of feta cheese

100 grams of Parmesan cheese

2 tablespoons vinegar

1 tbsp sugar

1 egg yolk

herbs and spices - to taste

Dough products:

200 grams of flour

50 grams of butter

50 grams of lard

8 tsp cold water

The products are for 8 servings, cooking time - 30 minutes.

Method of preparation:

1. Sift the flour, add the butter, lard and grind until you get small fat crumbs, gradually adding water. Knead the dough and leave it for 30 minutes in the refrigerator.

2. After the dough has cooled, cut the eggplant into cubes, fry in oil and place on paper to drain off excess fat.

3. Cut the tomatoes and celery into cubes and stew for 5 minutes.

4. Add the eggplants to the pan with the tomatoes and celery and stew everything together for another 3-4 minutes.

5. Season all this with vinegar, sugar, spices and stew for 5 minutes.

6. Place the cooled dough in a baking dish with a diameter of 24 cm. Add the yolk and sliced ​​feta cheese to the slightly cooled filling and spread the mixture on the dough. Sprinkle with grated Parmesan cheese on top. Bake the pie in an oven preheated to 200 degrees for about 30 minutes.
