Method of preparation:
Wash, dry, cut the aubergines lengthwise. Spread them with olive oil, salt and grill on both sides.
Heat olive oil in a pan, add quinoa, coriander, turmeric, carrots, corn, chopped peppers, cheese and lemon juice. Pour 500-600 milliliters of water, stir and simmer for 15 minutes.
When ready, turn off the stove, allow the stuffing to cool and fill the eggplant slices with it. Roll into rolls and serve hot or cold, garnished with chopped parsley and mint leaves.
