Required products :
4-5 eggplants
3-4 eggs
1 large onion a
few cloves garlic (to taste)
parsley to taste
frying oil
Method of preparation :
Peel the aubergines, cut them into medium-sized cubes, sprinkle with salt and leave for about 10 minutes, then wash with cold water and place in a suitable container.
Beat the eggs with a pinch of salt, pour over the aubergines and mix thoroughly. Leave the combination for 30-40 minutes, stirring periodically during this time. When the vegetables absorb the eggs, transfer to a hot pan in which you have put enough oil to cover the bottom of the dish. Five minutes later, add the finely chopped onions and garlic. Fry everything for another 10-15 minutes, stirring.
When a golden crust begins to form, remove the dish from the heat and transfer to a suitable bowl. Sprinkle with chopped fresh parsley or another green spice of your choice.
The dish is served cold.
