Necessary products:

 

  • 2 potatoes, peeled and cut into cubes
  • salt, pepper, olive oil
  • 1 egg
  • 30 grams of butter
  • 300 grams of finely chopped ripe tomatoes
  • 150 grams of frozen or canned peas
  • 1-2 red peppers, finely chopped
  • finely chopped onion
  • finely chopped parsley for decoration
  • a pinch of sugar
  • a pinch of paprika
  • 1 teaspoon red wine

 

Method of preparation:

 

Spread the potatoes in aluminum foil, season with salt, pepper, olive oil and wrap. Preheat oven to 200 degrees and bake for 30 minutes. Cool and pour the potatoes into a clay pot.

 

Heat olive oil in a pan and fry tomatoes, peas, peppers and onions. Season with salt, pepper, paprika and sugar. Stir and pour the wine. Cook for 10-15 minutes and spread the vegetables on the potatoes.

 

In another pan, heat the butter, beat the egg and fry it. Use a spoon to pour hot grease over its surface.

 

Drain and garnish the casserole with the egg. Sprinkle with chopped fresh parsley and serve.
