We continue with the second part of "Exotic fruits and vegetables" , in which we will meet you with purple potatoes, horned melons, red cucumbers and "Buddha's Hand". Here is more about them ...

 

Purple potatoes

Their color is rich, they are used to make chips, mashed potatoes and other dishes that require ordinary potatoes. The purple vegetable is called Purple Majesty, it tastes like its familiar counterparts, the difference is that it is saturated with anthocyanins, which give the characteristic color of blueberries, blackberries and eggplants.

 

Red cucumbers

The next plant is tentatively called "red cucumber" because it actually has nothing to do with the vegetable in question. It has its own taste, which is somehow nothing, the color is bright red, used mostly for decorative purposes. Belongs to the pumpkin family.

 

Horned melon or Kiwano

The plant is native to New Zealand, its appearance resembles a large yellow-orange cucumber with many horns on its surface. In fact, the nod is not so ugly :) - "thorns" are soft and the bark is not thick. Melon looks like a cucumber and a lemon at the same time, it is very refreshing. It contains vitamins from the PP group, and the presence of vitamin C is more than enough.

 

The hand of the Buddha

The Buddha's hand is a popular fruit in Asia, it belongs to the citrus family, the inside under its thick shell is very similar to a lemon.

 

This is the largest citrus, it reaches a length of 20 - 40 cm and a diameter of 14 - 28 cm.
