Required products :

  • 1 onion
  • 240 grams of chickpeas
  • 60 milliliters of lemon juice
  • 5 grams of chili pepper
  • 15 grams of parsley
  • 10 grams of cumin seeds
  • 20 milliliters of natural yogurt
  • salt to taste
  • 20 grams of coriander
  • 1-2 cloves of garlic
  • 30 milliliters of sunflower oil
  • 30 grams of sesame seeds
  • 70 grams of sesame tahini
  • 30 grams of rice flour
  • 3 grams of baking soda


Method of preparation :

Soak chickpeas overnight in cold water. Then pour the beans into a colander to drain well from the liquid.

Peel the onion and garlic cloves, chop them. Also chop coriander and parsley.

Mix in a blender the products you have prepared so far, including chickpeas. Grind until smooth, pour half the lemon juice and beat once more.

Mix rice flour with chili pepper, baking soda, you can add a little coriander. Pour 2 tablespoons of water with the mixture, put the cumin and knead the dough. Put it in the fridge for a while.

Mix the remaining citrus juice with sesame tahini and yogurt. add salt, optionally add garlic. The consistency of the resulting sauce should resemble liquid honey.

Take the dough out of the fridge and combine it with the mixture you blended.

With wet hands, make balls out of it, roll each in sesame seeds and fry in hot oil.

Serve the falafels with the sauce.
