Heat a frying pan with fat, beat the eggs with salt and pepper and set aside. Finely chop the onion, garlic, arugula and fry them.
Pour the eggs into the mixture and cook for another 1-2 minutes and cover with a lid. After 2 minutes, remove the pan from the heat, turn the frittata over with a plate and bake the other side at the same time.
Put the dish on a plate, sprinkle with Parmesan cheese and serve warm.
