Required products :

4 fillets of white fish each weighing about 200 grams

200 grams of bulgur

200 grams of spinach

2 medium onions

3 medium carrots

6 dried apricots

700 milliliters of chicken broth

4 thin slices of lemon

2 teaspoons cumin seeds

1 teaspoon hot paste (below are the products for making it)

olive oil

salt and freshly ground black pepper to taste

 

For the hot pasta:

4 fresh hot red peppers (chili)

1 dried hot pepper

1 clove garlic

1/4 teaspoon unground cumin

olive oil

coarse sea salt

 

Method of preparation :

Peel an onion and slice it. Peel the carrots and grate them with a coarse grater, cut the apricots into several pieces each.

Heat olive oil and fry onion in it until soft (about 10 minutes). Then add the grated carrots, cumin and fry everything for about 2 minutes, stirring occasionally.

Pour the bulgur, chopped dried apricots and add the hot paste. Pour the broth, add salt and bring to a boil. Reduce the heat and let the combination cook on low heat for 7 minutes.

Remove the hard parts from the spinach leaves, wash it and drain the liquid with a colander or dry with a paper towel.

Shred the large leaves and leave the small ones whole. Add to the pan with the other products and mix everything thoroughly.

Arrange the white fish fillets on top of the mixture, season with salt and pepper, cover with lemon slices.

Close the dish with a lid and let the dish cook for 8 minutes. Then reduce the temperature and leave for another 7 minutes on the stove.

The fish should not remain raw, but should be juicy, and the bulgur - to soften.

Remove the dish to suitable plates and sprinkle with olive oil.

 

The hot paste is prepared as follows:

Cut the fresh hot peppers in half lengthwise and remove the seeds. Peel the garlic and mix all the ingredients in a blender. Add a little salt, olive oil, grind to a thick paste. Finally add the cumin, stir.

The finished paste is stored in a glass container in the refrigerator.
