Steak with Chimichuri sauce is a classic combination, and marinated hot jalapeno peppers add spiciness to the dish.

Required products :

  • 750 grams of flank stack
  • 2 tablespoons olive oil

for Chimichuri sauce:

  • 2 green hot peppers, finely chopped
  • 100 milliliters of extra virgin olive oil
  • small packet of oregano leaves
  • a bunch of parsley
  • 1 diced onion
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, chopped
  • 10 marinated hot jalapeno peppers
  • peel of 1 lemon

Method of preparation :

Blend all the ingredients for the Chimichuri sauce until fine, but not puree. Transfer to a bowl and season to taste. The sauce should be fragrant, herbal and spicy. Cover with foil and refrigerate.

Remove the flank stack from the refrigerator 1 hour before cooking so that it reaches room temperature. Heat the barbecue or a large ribbed pan.

Season the meat with plenty of sea salt and pepper, spread with olive oil on both sides and bake on a barbecue or in a ribbed pan for 4-5 minutes per side or until ready according to your preferences. Transfer the stack to a board, let it rest for 5 minutes, then cut it into thin slices.

Serve flank steak with grilled corn, sweet baked potatoes and chimichuri sauce.
