In Bulgaria we do not celebrate Thanksgiving, but it does not prevent us from stealing a good idea for flavoring meat or a useful trick for cooking delicious turkey meat. This mix of fresh spices is great for spreading on meat before roasting, here's what it includes.

Required products :

  • 1/4 tea cup fresh parsley, finely chopped
  • 1 tablespoon finely chopped rosemary
  • 1 tablespoon finely chopped sage
  • 1 tablespoon finely chopped thyme
  • 2 tablespoons olive oil
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt and pepper

Method of preparation :

In a small bowl, mix all the products well, you can do it with your fingers to rub the spices well into each other.

This amount is enough for about 2 kilograms of turkey.

If you do not have fresh spices, reduce the amount indicated for them and make the mix with dry, the ratio is 3: 1, ie. if there is 1 tablespoon of fresh thyme in the recipe, then use 1 teaspoon or 1/3 tablespoon of dry herb. If you take advantage of the preparation of the spice from dried plants, you can store it in a jar for several days. But if you make it from fresh herbs, it should be used immediately.
