How To Cook Fried Aubergines Baked In Tomato Sauce With Garlic And Mozzarella - Recipe

Required products :

3 eggplants
250 grams mozzarella
1-2 jars canned tomatoes
2 cloves garlic
12 tablespoons olive oil
flour for rolling
salt and ground black pepper to taste

 

Method of preparation :

Turn on the oven to preheat to 220 degrees.

Pour olive oil into a suitable container and add the crushed garlic cloves. Put on the stove, put the tomatoes and season with salt and ground black pepper to taste.
Let the mixture begin to simmer and simmer for 15 minutes.

Peel the aubergines, cut them into 5-6 pieces lengthwise and roll them in flour. Then fry them in hot olive oil on both sides until golden.

Cut the mozzarella into thin slices.

Coat the bottom of the pan with the tomato sauce and place a row of aubergines. On them - pieces of mozzarella, pour sauce, followed again by eggplant, tomatoes and cheese.

Bake the dish in the preheated oven until the mozzarella melts and acquires a beautiful brownish tinge (about 30 minutes).
