Required products :

  • about 1.5 kg of green leaves of your choice - beet leaves, kale, spinach
  • 1/4 tea cup olive oil
  • 2 medium onions - one finely chopped, the other in crescents
  • 2 cloves garlic, chopped
  • 1 large bunch fresh coriander
  • the juice of 1 lemon
  • sol

Method of preparation :

Blanch the green leaves in boiling water for 2-3 minutes. Transfer them to a colander to drain and cool. When they are cool enough to hold them in place, squeeze them through a towel.

Fry the onion, which is cut into crescents in olive oil for 2-3 minutes on high heat. Then reduce the heat and fry until 5-8 minutes and become golden and crispy. Drain on kitchen paper.

Add in the same bowl finely chopped onion and garlic, fry until golden brown. Add the coriander stalks (finely chopped) and vegetables, cook for 2-3 minutes. Add the fried onions and stir for the last time.

Sprinkle with coriander leaves and sprinkle with lemon juice. Serve.
