Required products :

  • 300-400 grams of pork
  • 3-4 teaspoons of olive oil
  • 1-2 sprigs of thyme
  • a pinch of salt and pepper
  • 1 teaspoon lemon juice
  • 1-2 teaspoons honey (optional)
  • 1-2 teaspoons of balsamic vinegar
  • 150 grams of tomatoes (best to use cherries)

 

Method of preparation :

Wash the meat under cold running water and dry it. Cut into portions, season them and sprinkle with lemon juice. If desired, use a little honey. Leave to marinate for 25 minutes.

Pour olive oil into a pan (you can replace it with sunflower oil), in which you put the thyme stalks, and if you decide, 1-2 cloves of garlic.

 

Once the fat heats up and absorbs the aromas, remove the thyme (and garlic, if you used one) and then fry the pork until golden brown (on both sides) at a medium temperature (you can close the pan with a lid).

 

When ready, remove and wrap in foil to keep warm until you finish cooking the garnish.

Put the tomatoes in the same olive oil, mix them carefully so as not to spoil their integrity.

 

Add balsamic vinegar and spices to taste. Let fry for 5-7 minutes.

 

You can now serve the pork with the prepared tomatoes, and it is an option to serve the dish with a thyme stalk, which you used earlier.
