Necessary products

For the stuffing:

  • 2 heads of shallots
  • 1 egg
  • left
  • 200 grams of nettle
  • 200 grams of mushrooms
  • 3 potatoes
  • 60 grams of butter


For the dough:

  • 270 grams of flour
  • 1 tablespoon olive oil
  • 2 eggs
  • 1 tablespoon cold water
  • salt to taste

 

Method of preparation :

Sift the flour with the salt, add the butter, eggs and pour 1 tablespoon of very cold water. Mix and knead a stiff dough, which you wrap in plastic wrap and put in the fridge for half an hour until you make the filling.

Finely chop the onion, fry it lightly in 1 tablespoon oil, add the chopped nettle leaves, stir and sprinkle with pepper and salt.

Remove the filling to a bowl and allow to cool.

Boil the potatoes and pass them through a sieve.

Add the egg and potatoes to the nettle filling. The ravioli mixture is ready.

Take the dough out of the fridge, roll it out thinly, cut circles with the help of a cup and put 1 teaspoon of the filling in half of each. Close with the other part and pinch the ends with your fingers.

Do not cook the ravioli, but fry it in hot vegetable oil.

Serve them with mushrooms fried in olive oil and sour cream.
